Ingrediants:
150 g button mushrooms
25 g (1 oz) butter
4 skinless, cooked chicken breasts
100 g (4 oz) lean ham
350 g (12 oz) fresh or ready made cheese sauce
100 g (4 oz) frozen peas
1 tablespoon chopped fresh parsley or tarragon
300 g (11 oz) puff pastry
1 tablespoon plain flour, for dusting
2 tablespoons milk
Salt and freshly ground pepper
- Preheat the oven to 200 C / 400 F / Gas mark 6
- Thickly slice the mushrooms. Melt the butter in a frying pan, add the mushrooms and sauté over a medium to high heat for 3-4 minutes, until tender. Tip into a large bowl.
- Cut the chicken into chunks and roughly chop the ham. Pour the sauce over the mushrooms, add the chicken, ham, peas and parsley or tarragon. Season, mix well and divide between 4 individual pie dishes. Brush the edges of each dish with a little cold water.
- Lightly dust a work surface with the flour, roll the pastry out and cut out four discs slightly larger than the pie dishes. Cover the dishes with the pastry discs, pressing down the edges to seal. Cut a hole for the steam to escape. Brush the tops with the milk, then place the dishes on a baking sheet and cook on the middle shelf of the oven for about 20 mins, until the pies are piping hot and golden brown. Serve immediately with steamed broccoli.
